Spicy Fries with Curried Garlic Mayo

Who doesn't love french fries? And with curry spices, yes please!!

These Spicy Fries have layers of curry spice flavours, both baked into the fries and in a Curried Garlic Mayo dip to serve on the side. Now the story with the dip came on a trip to Montreal several years ago when I ordered french fries at a restaurant. The server asked if I wanted mayonnaise (for the fries) which was new to me. A tomato chutney condiment for fries was definitely a thing in our home, but the mayonnaise was all new!

And now my french fries always come with a side of this Curried Garlic Mayo as a dipper!

Spicy Fries with Curried Garlic Mayo

For a milder flavour use only 1 tablespoon of Arvinda's Curry Masala for the french fries.

Ingredients:
2 LBS. russet potatoes, peeled
3 CUPS water
1 1/2 TSP. sea salt, divided
2 TBSP. olive oil
1 1/2 TBSP. ARVINDA'S CURRY MASALA

CURRIED GARLIC MAYO
1 CUP mayonnaise
1 TBSP. pureed garlic
1 TSP. ARVINDA'S CURRY POWDER or ARVINDA'S MADRAS CURRY POWDER

Directions:
1) Cut the potatoes into 1/4-inch thick fries.
2) In a medium pot, add the potatoes, water and 1 teaspoon of salt. Bring it to boil for 5 to 10 minutes until the potatoes are parboiled (until mostly cooked, but not mushy). Drain the water from the potatoes.
3) CURRIED GARLIC MAYO: In a small bowl, combine the ingredients. Set aside.
4) Preheat the oven to 450°F / 232°C.
5) In a large bow, mix the olive oil with Arvinda's Curry Masala. Gently toss the potatoes with the spices and oil, coating well. Scatter onto a sheet pan, and sprinkle on the remaining sea salt. Bake in the oven for 10 minutes. Using a spatula, flip the fries and bake for another 5 to 10 minutes.
6) Remove the fries from the oven and season with extra sea salt, if needed. Serve the fries hot with the Curried Garlic Mayo.
