Jerk Chicken & Island Side Veggies
made with Arvinda's Jamming Jamaican Jerk
The spice that pops in a jerk marinade is allspice, lending a warm and sweet flavour to this quintessential Jamaican dish. Making the marinade is easy—toss all the ingredients in a food processor, blend away and marinate the chicken. Once done and the marinated chicken hits the grill and gets to your plate, you’re whisked away to the island. For a vegetarian option, use this marinade on tofu or tempeh. The Island Side Veggies consists of juicy pineapple, sweet potato and corn which makes this a bright and beautiful sunny plate of side vegetables for any summer meal.

JERK MARINADE: | |
1 | medium onion, cubed |
½ CUP | finely chopped green onions |
1 | scotch bonnet pepper OR fresh chili pepper (use ½ for less heat) |
2 to 3 | garlic cloves |
2 TBSP. | ARVINDA’S JAMMING JAMAICAN JERK |
1 TBSP. | brown sugar |
1 TSP. | lime juice |
1 TSP. | sea salt, or to taste |
4 | chicken breasts |
ISLAND VEGGIES | |
2 CUPS | cubed sweet potatoes |
1 CUP | fresh corn kernels OR frozen corn |
⅔ CUP | water |
¼ TSP. | sea salt, plus extra to taste |
1 TBSP. | olive oil |
1 CUP | pineapple chunks |
1 TSP. | ARVINDA’S JAMMING JAMAICAN JERK |
½ CUP | finely chopped red onions |
¼ CUP | finely chopped green onions, to garnish |
MARINADE: Combine all the marinade ingredients in a food processor. Process until smooth.
Place the marinade on the chicken, coating well, cover and marinate for at least 2 hours (or overnight). Grill the chicken on the barbecue.
ISLAND VEGGIES: In a medium skillet, add the sweet potatoes and the corn with the water. Sprinkle in the salt. Cover and simmer on medium-high for 10 to 12 minutes or until the sweet potatoes are tender. Remove the lid and continue to simmer until the water is absorbed.
Add the oil, pineapple and sprinkle in ARVINDA’S JAMMING JAMAICAN JERK and the salt, to taste. Gently fold to combine. Mix in the red onion and garnish with green onions. Serve this as a side with the jerk chicken.
