Masala Fries with Garlicky Curried Mayo Dip
made with Arvinda’s Tandoori Masala
The ultimate masala fries, try this recipe with any one of Arvinda’s signature masalas, or switch it up with sweet potatoes for a variation. OPTION: Try these fries in the air fryer for convenience.

2 LBS. | potatoes, peeled and washed |
2 TBSP. | oil |
1 TBSP. | ARVINDA’S TANDOORI MASALA |
¾ TSP. | sea salt, sprinkle on more to taste |
GARLICKY CURRIED MAYO DIP | |
½ | mayonnaise OR plant-based mayo |
2 TSP. | pureed garlic |
1 to 2 TSP. | ARVINDA’S CURRY POWDER |
OVEN METHOD: Cut the potatoes into 3/8" cut fries. Place them in a large bowl and cover with water. Soak for 1 hour. Drain well.
Pat the potatoes with a clean tea towel until completely dry. In a large bowl, mix the oil, ARVINDA’S TANDOORI MASALA and the salt. Toss in the potatoes and coat them well.
Preheat the oven to 425F/220C. Place the fries on a baking sheet in a single layer. Bake for 15 to 18 minutes. Flip the fries, and bake again for another 10 minutes, or until crispy. Sprinkle on extra sea salt, if desired.
GARLICKY CURRIED MAYO DIP: Combine the dip ingredients, mix and serve with the Masala Fries.
AIR FRYER METHOD: Preheat the air fryer to 400F/200C. Follow steps 1 and 2 (reducing oil to 1 TBSP.) and place the potatoes in the basket. Air fry for 15 to 20 minutes, or until crispy. Sprinkle on extra sea salt, if desired. Serve with the Garlicky Curried Mayo Dip on the side.
